Homemade Marshmallows

I found this recipe on King Arthur Baking website. My family loves them for our hot cocoa when it’s cold outside. After they have set-up (about 4 hours), I like to roll them in power sugar, sweet cocoa power or crushed peppermint. I store them in plastic container with parchment paper separating the rows marshmallows.

Ingredients

  • 3 packages (21g) unflavored gelatin
  • 1 cup (227g) cool water, divided
  • 1 1/2 cups (298g) granulated sugar
  • 1 cup (312g) light corn syrup
  • 1/8 teaspoon salt
  • 1 tablespoon (14g) Pure Vanilla extract
  • confectioners’ sugar, to sprinkle on top
