Easy Sourdough Milk Bread

One loaf recipe

420g. (3cups) Bread flour or unbleached flour

80g. (¾ cups) Whole wheat flour

¾ cup Milk

¾ cup water

200g. (1 cup) Sourdough starter

68g. (⅓ cup) Sugar

6g. (1 teas) Salt

4 Tablespoon Unsalted butter (melted)

Mix all ingredients together and knead the dough for at about 10 mins until soft and smooth. Let dough rise to double in bulk about 2-3 hours. Remove from the bowl and knead for a few mins. Form into a round ball and cover. Let sit and rest for 20 mins.

Form dough into loaf and place in greased 9.25 x 5.25 loaf pan. Let rise until doubled in bulk about 1 to 1 1/2 hours.  Heat oven at 450 degrees. Let bread continue to rise on the counter for another hour. Score bread with a lame. Cover bread loosely with an aluminum foil tent and place bread pan on a cookie sheet. Put bread in the hot oven, pour ¼ cup of water on the floor of the oven, to add some steam and bake for 20 mins. Open oven, remove foil, turn oven down to 400 degrees close oven and bake an additional 15/20 mins.
